Lupins are legumes with a great energy supply, with a very high protein content and rich in essential amino acids. Lupine is a precious and healthy ingredient, rich in mono and polyunsaturated fatty acids, carotenoids and vitamin E, as well as mineral salts, trace elements and phytochemicals. They have a low glycemic index, zero cholesterol content and are naturally gluten-free.
Lupine, the seed of the Lupinus albus plant, belonging to the Leguminosae family, has been known since ancient times in the Mediterranean basin and in the Middle East. Traces of this legume have even been found in the Mayan tombs and in the Egyptian pyramids. It is mentioned by Giovanni Verga in the famous novel "I Malavoglia", where it embodies the popular gastronomic reality of the late nineteenth century.
DIRECTIONS: This flour, used in variable percentages (10% -40%) with other flours, such as spelled, gives softness and flavor to sweet and savory baked preparations.
