Timilìa has a gluten index (a measure of gluten structural strength ) of less than 15%, which differentiates it from modern grains that have indices over 90%. Some studies carried out on ancient grains show a lower allergenicity, compared to modern grains, so as to make them compatible for consumption for those suffering from gluten intolerances, other than celiac disease.
