Dried shiitake mushrooms
prized Spanish mountain mushrooms. The name derives from the Japanese "Shii" (oak) and "Take" (mushroom), as they grow spontaneously on the trunk of these trees. They have a fleshy and succulent hat.
It is a mushroom rich in carbohydrates, proteins, dietary fiber and lipids. The amount of protein reaches 15-17% of the weight of the dried mushroom and, providing all the essential amino acids. ? Contains high quantities of vitamin D (ergosterol) which in the presence of ultraviolet light is converted into vitamin D3 (calciferol), essential for bone health. It also has a significant amount of B vitamins and mineral salts such as iron, manganese, potassium, calcium, magnesium, copper, phosphorus and zinc.
They give vigor and vitality, help digestive processes, have antiviral properties and raise the immune defenses. They have a prebiotic effect, that is, they promote the formation of bacterial flora.
The shiitake mushroom, whose scientific name is Lentinus Edodes, is an edible mushroom which, thanks to its therapeutic properties, is well known and used in the Asian continent, especially in China and Japan. It is considered the second most edible mushroom in the world; the name shiitake means 'oak mushroom', as it typically grows on the slopes of oaks.
DIRECTIONS: it is used above all for the preparation of soups and risottos or to make creams, velvets or to dress stir-fried tofu or tempeh. Their use requires a soaking period of at least 4-5 hours, in order to rehydrate them. It is recommended to use the soaking water to cook pasta, rice, other cereals or the mushrooms themselves to further flavor them. They can also be eaten lightly cooked on the plate.
